This cornbread is as elemental as it gets — just whole corn kernels, water, salt, oil, and polenta, baked until golden and firm. No refined flour, no eggs, no dairy. 🌿 The Healing Ingredients

📖 Why Whole Corn Matters

Most commercial cornbread relies on degerminated cornmeal — a processed product that has had the nutritious germ and bran removed, stripping away fiber, healthy fats, and B vitamins. This recipe uses whole corn kernels blended into liquid, preserving everything the corn has to offer. Together with stone-ground polenta, they create a bread that is genuinely nourishing — not just a vehicle for butter and sugar.

📋 The Recipe

Step 1 — Blend and pour into mixing bowl:

  • 2 cups Corn Kernels
  • 2 cups Water

Step 2 — Add and stir well:

  • 1 tsp. Salt
  • ¼ cup Oil

Step 3 — Add and mix:

  • 1 cup Polenta

Directions

  1. Blend corn kernels and water until smooth, then pour into a mixing bowl.
  2. Add salt and oil and stir well.
  3. Add polenta and mix until fully incorporated.
  4. Pour into a greased loaf pan.
  5. Bake at 350°F for 45–60 minutes, until firm.

💡 Tips & Serving Ideas

Start checking at 45 minutes by inserting a toothpick into the center — the loaf is done when it comes out clean and the top is golden and firm.
