📖 Why Unleavened?

Leavening adds complexity, rise, and flavor development time. Unleavened bread skips all of that. The result is denser, flatter, and more compact — but also faster, simpler, and in some ways more nutritionally direct. Without the long fermentation that breaks down phytic acid in sourdough, pairing this bread with vitamin C–rich foods (fresh vegetables, citrus) helps the body absorb its iron more effectively. It is the bread of pilgrims, monasteries, and mountain retreats — elemental, reliable, and deeply satisfying.

📋 The Recipe (Serves 12)

Ingredients

  • 6 cups Wheat Flour
  • ½ cup Avocado Oil
  • 2 tsp. Salt
  • 3 cups Water

Directions

  1. Mix all ingredients in a bowl.
  2. Pour into an oiled tray.
  3. Bake at 350°F for approximately 1–1½ hours.

💡 Tips & Serving Ideas

The batter will be thick but pourable — similar to a very dense quick bread. A deeper pan produces a taller, moister loaf; a shallow baking dish produces a flatter, crispier result. Start checking at 1 hour by inserting a toothpick into the center — done when it comes out clean and the top is a deep, even golden brown. Allow to cool for at least 20 minutes before slicing. Serve with olive oil and sea salt, avocado, hummus, or alongside any soup or bean dish in The Healing Kitchen series. Stores well wrapped at room temperature for 3 days.
