📖 Why Knead This Dough?

Unlike soaked seed crackers that use gel as a binder, this recipe builds structure through physical kneading. The 3-minute knead develops the natural proteins in the quinoa and buckwheat flours, creating a network that holds the seeds in place and gives the dough enough elasticity to roll thin and transfer cleanly. The 20-minute rest allows proteins to relax and flaxseed meal to fully hydrate — both essential for a dough that rolls without tearing.

Ingredients

  • 1 cup Quinoa Flour
  • ¾ cup Buckwheat Flour
  • 6 Tbsp. Sunflower Seeds, ground
  • 6 Tbsp. Sesame Seeds
  • 3 Tbsp. Flaxseed Meal
  • ¼ tsp. Salt
  • ⅓ cup Water
  • 1½ Tbsp. Honey
  • 2 Tbsp. Avocado Oil

Directions

  1. Preheat the oven to 350°F.
  2. Mix all the ingredients until a firm ball is formed.
  3. Knead for 3 minutes.
  4. Let rest for 20 minutes.
  5. Divide into 2 lumps.
  6. Shape each piece of dough.
  7. Prepare 2 half-sheet pans lined with parchment paper or silicone mats.
  8. On a lightly oiled work surface, roll each piece of dough thinly into a rectangular shape to fill the sheet pan.
  9. Carefully transfer the rolled dough onto the prepared sheet pans. Using a pizza wheel, cut the dough into shapes and sizes of your choice.
  10. Bake for 10 minutes at 350°F. Rotate if necessary.
  11. Bake for another 10 minutes, or until the crackers are deep brown.

💡 Tips & Serving Ideas

A lightly oiled work surface is essential — the dough will stick to a dry surface and tear when transferred. Roll as thin as possible for the crispiest result. Cut with a pizza wheel before baking for the cleanest edges. Rotate pans at the 10-minute mark for even browning. “Deep brown” is the goal — that color is where the complex flavor lives. Cool completely on a rack before storing. Store in an airtight container for up to 2 weeks; freezes well.
