📖 The Science of Seed Gel

The 15–30 minute soak is where the recipe’s structural magic happens. Flax and chia seeds contain mucilage — a soluble fiber that absorbs water and swells into a thick gel. This gel surrounds and binds all the other seeds, creating a cohesive mass that can be spread into a thin sheet and baked without any flour, egg, or added oil. As moisture evaporates during baking, the gel solidifies, locking the seeds together into a crisp, unified cracker.

Ingredients

  • ½ cup Sunflower Seeds
  • ½ cup Pumpkin Seeds
  • ¼ cup Flax Seeds
  • ¼ cup Chia Seeds
  • ¼ cup Sesame Seeds
  • 1 cup Water
  • ½ tsp. Salt

Directions

  1. Soak for 15–30 minutes.
  2. Spread to desired thickness.
  3. Bake at 300°F for 30 minutes.
  4. Cut into pieces.
  5. Bake for an additional 20–30 minutes, until brown.

💡 Tips & Serving Ideas

30 minutes of soaking produces better cohesion than 15. Use a silicone baking mat or parchment-lined sheet and wet your spatula to spread evenly — it will stick to dry tools. Spread as thin as possible for the crispiest result. Score into pieces before the first bake for cleaner cuts. The lower 300°F temperature slowly dehydrates the crackers without burning the delicate seeds. The two-stage bake ensures complete dehydration through to the center. Cool completely before storing — they crisp further as they cool. Store in an airtight container for up to 2 weeks, or freeze for up to 3 months.
