šŸ“– Why Pinto Beans?

Per cooked cup: approximately 15g protein, 15g fiber, and substantial folate, manganese, phosphorus, iron, copper, and potassium. Their soluble fiber binds cholesterol, regulates blood sugar, and feeds beneficial gut bacteria. Pinto beans are also a significant source of molybdenum, a trace mineral that supports the body's ability to metabolize sulfites.

Ingredients

  • 3 cups Pinto Beans (soaked overnight and well-washed)
  • 1 tsp. Roasted Garlic
  • 1 tsp. Onion Powder
  • 2 Bay Leaves
  • 2 Tbsp. Green Onions
  • Pinch Cayenne Powder
  • Water

Directions

  1. Cook beans for 35 minutes in an Instant Pot with the bay leaves in water.
  2. Make sure the water reaches 1½ in. above the beans.
  3. Once the Instant Pot is done cooking the beans, add the seasonings and simmer in a pot on the stove for about ½ an hour.
  4. Add green onions before serving.

Soaking overnight softens the beans and begins breaking down oligosaccharides — always rinse well after soaking. Adding seasonings after pressure cooking preserves their aromatic compounds. The stovetop simmer is where the flavor develops — don't skip it. Serve over rice, mashed as a spread, or as the protein base for tacos, burritos, and grain bowls. Refrigerate up to 5 days; freezes beautifully.
