Three ingredients. Fifteen minutes. One beautifully rich, naturally sweet pie crust that contains no butter, no refined sugar, no refined flour, and no eggs — and yet delivers the depth, texture, and satisfaction of a traditional pastry crust. The secret is the combination of Medjool dates soaked in boiling water (which become a smooth, caramel-like binding paste) with the earthy richness of walnuts and the structural contribution of fresh breadcrumbs.
🌿 The Healing Ingredients
- Dates (soaked in ½ cup boiling water) — Soaking in boiling water softens Medjool dates completely, blending into a silky, caramel-sweet paste that binds the crust and provides all the sweetness needed. Rich in fiber, potassium, magnesium, and antioxidant polyphenols. → Shop Dates, Medjool, Organic | Shop Dates, Khadrawi, Whole, Organic
- Walnuts — Provide richness, fat, and structural texture. The richest plant source of omega-3 ALA, with ellagitannins that support gut health and anti-inflammatory function. Their natural oils help the crust bind and hold shape during baking. → Shop Walnuts, Black Fancy, Large Pieces | Shop Mixed Nuts Deluxe, Raw
- Fresh Breadcrumbs — Provide starchy structure that holds the crust together and gives it a firm, sliceable texture after baking. Use gluten-free bread for a fully gluten-free crust.
📖 When to Use This Crust
This crust is ideal for any pie or tart with a moist filling — fruit pies, nut butter pies, pumpkin-style fillings, raw dessert bases, and tarts with custard-style fillings. The date-walnut combination pairs particularly well with citrus, chocolate, vanilla, and stone fruit fillings. At approximately ½ inch thickness, it provides a substantial, satisfying base that slices cleanly.
📋 The Recipe (Yields 1 medium crust)
Ingredients
- 1 cup Dates (soaked in ½ cup boiling water)
- 1 cup Walnuts
- 1 cup Fresh Breadcrumbs
Directions
- Blend all ingredients into a thick paste.
- Press into a baking tray about ½ inch thick.
- Bake for approximately 15 minutes at 350–400°F.
💡 Tips & Serving Ideas
Don't drain the soaking water from the dates — add it to the blender with the dates. Blend until the mixture is thick and uniform but still has some walnut texture. Press firmly and evenly using the back of a spoon or damp fingers. A higher temperature (400°F) produces a crisper, more caramelized crust; lower (350°F) a softer, chewier base. Watch carefully after 12 minutes — the natural sugars in the dates can catch quickly. Pre-bake the crust before adding any filling.
