Great Northern beans are the quiet achievers of the legume family ā mild in flavor, beautifully creamy in texture, and extraordinarily versatile. Their neutral profile makes them an ideal canvas for medicinal herbs and spices, and this Instant Pot recipe uses that to full advantage with roasted garlic, warming paprika, fresh basil, and a smashed tomato base that creates a rich, satisfying broth.

- Bay Leaves ā Infuse the pressure cooking environment with anti-inflammatory and digestive-supportive compounds. ā Shop Organic Bay Leaves
- Tomato (peeled and smashed) ā Creates a natural sauce base rich in lycopene and vitamin C, boosting iron absorption from the beans.
š Why Northern Beans?
Great Northern beans are high in soluble fiber ā particularly pectin ā which binds bile acids containing cholesterol and removes them from the body, actively lowering LDL cholesterol over time. Per cooked cup they provide approximately 15 grams of protein, 12 grams of fiber, and significant folate, manganese, copper, and magnesium. Their white flesh is also notable for molybdenum content ā a trace mineral that supports the body's sulfite detoxification enzyme systems.
š The Recipe
Ingredients
- 3 cups Northern Beans (soaked overnight and well-washed)
- 1 tsp. Roasted Garlic
- ½ tsp. Onion Powder
- 2 Bay Leaves
- 2 Tbsp. Basil Leaves
- Pinch Cayenne Powder
- ½ tsp. Paprika
- 1 Tomato (peeled and smashed)
- Water
Directions
- Cook beans in an Instant Pot for 30 minutes with the bay leaves.
- Cover the beans with water (water should reach 1½ inches above the beans).
- Once the Instant Pot is done cooking the beans, add the seasonings.
- Simmer in a pot on the stove for about ½ hour.
- Add basil leaves before serving.
š” Tips & Serving Ideas
The smashed tomato dissolves into the broth during the stovetop simmer, creating a naturally thickened, velvety sauce. Adding fresh basil at the very end ā not during pressure cooking or the simmer ā is key to preserving its volatile aromatic compounds and fresh green color. Serve over rice, with crusty whole grain bread for dipping, or as the base of a white bean soup with additional vegetables. Refrigerate up to 5 days; freezes exceptionally well.
