Tapioca starch, unlike cornstarch or arrowroot, produces a glossy, elastic, genuinely stretchy sauce when boiled — which is exactly what makes mozzarella mozzarella. Soaked cashews (or walnuts) provide the rich, neutral cream base; nutritional yeast provides the cheese flavor; lemon juice and garlic provide the brightness and savory depth; and the boil activates the tapioca’s stretching properties. The result is a vegan mozzarella that pulls, stretches, and bubbles with convincing authenticity.

📖 The Boil Technique
The boil is not optional. Tapioca starch must reach a full, rolling boil to activate its elastic gel network — gentle simmering will not produce the stretching effect. Pour the blended mixture into the pan, bring to a boil over medium-low heat while stirring constantly, then let it boil for at least 1 full minute before removing from heat. The cheese will visibly change during the boil: from a thin, opaque liquid to a thick, glossy, elastic mass that pulls away from the sides of the pan.

💡 Tips & Serving Ideas
Blend for a full 90 seconds — any remaining nut texture will create small lumps in the finished cheese that become more visible after boiling. Stir continuously during the entire cooking process. After removing from heat, the cheese will continue to firm as it cools. Use immediately for pizza or pasta (it is most stretchy and spreadable while hot), or pour into a greased mold and refrigerate for a sliceable mozzarella block. Serves beautifully in a Caprese-style arrangement with tomatoes and fresh basil.
