📖 Why Gluten-Free Baking Matters at a Retreat

Gluten sensitivity affects a significant portion of the population, and retreat settings often serve guests with diverse dietary needs. Having a reliably delicious gluten-free baked good — one that no one identifies as “gluten-free” — is a meaningful act of inclusive hospitality. These muffins clear that bar easily. The two-rack baking method (bottom rack for structure, top rack to finish and brown) is the key to their distinctive golden top and fully cooked, non-gummy interior.

📋 The Recipe (Per Recipe — 2 Recipes = 55 Small Muffins)

Dry Ingredients

  • 1 cup Gluten-Free Flour (Bob's Red Mill 1-to-1 Baking Flour recommended)
  • 1 cup Corn Meal (Cornmeal or corn grits also work)
  • 1 Tbsp. Baking Powder
  • 1 tsp. Tapioca Starch (or flour)
  • 1 tsp. Salt

Wet Ingredients

  • 1½ cup Almond or Soy Milk
  • 2 Tbsp. Honey
  • ¼ cup Avocado Oil
  • ½ cup Corn, frozen

Optional

  • 1 Tbsp. Tahini

Directions

  1. Preheat the oven to 350°F.
  2. Mix together dry ingredients. (Bob's Red Mill 1-to-1 Baking Flour is recommended. Cornmeal or corn grits will also work.)
  3. In a separate bowl, thoroughly stir wet ingredients, then combine with dry ingredients.
  4. Grease muffin pans with coconut oil. Fill to the top and bake for 25 minutes on the bottom oven rack.
  5. Transfer to the top oven rack and bake for another 10 minutes, until golden.

💡 Tips & Serving Ideas

Filling muffin cups to the top is intentional — gluten-free batters don't rise the same way wheat-flour batters do. The two-rack method is essential: the bottom rack sets the structure; the top rack browns and crisps the top. Allow to cool 5 minutes before removing from pans — they firm up as they cool.
