📖 The Stock-Simmering Technique
Cooking the lentils in vegetable stock for approximately 45 minutes — until nearly all the liquid has been absorbed and the lentils are very soft with splitting skins — is the key technique. This long, slow simmer produces lentils soft enough to partially mash when mixed, which allows the patties to hold together during forming and baking. Do not rush this step; firm or undercooked lentils will not bind properly.

Ingredients
- 1 cup Dry lentils, well rinsed
- 2½ cups Vegetable stock
- 3 Tbsp. Coconut oil or avocado oil
- ½ med. Onion, processed
- 1 med. Carrot, processed
- ½ tsp. Cayenne pepper
- 1 tsp. Miso (optional)
- ¾ cup Spelt flour
- ¾ cup Breadcrumbs
- 1 Tbsp. Fresh mint, chopped
- 1 Tbsp. Fresh oregano, chopped
- 3 cloves Garlic, crushed
- Salt to taste
Directions
- Place the lentils and vegetable stock in a saucepan and bring to a boil.
- Lower heat, cover, and simmer for about 45 minutes, until nearly all liquid has been absorbed and the lentils are very soft, with splitting skins.
- Cook onion and carrot in a small amount of water until soft.
- Mix the lentils and seasonings in a large bowl.
- Mix in the flour and breadcrumbs.
- While still warm, form the lentil mixture into patties.
- Freeze the patties, or cook immediately and refrigerate.
- Place the burgers on a baking sheet.
- Preheat the oven to 400°F.
- Bake for approximately 15 minutes, until light brown.
💡 Tips & Serving Ideas
Form the patties while the mixture is still warm — it is much more pliable and holds together better than cooled lentil mixture. Wet hands make forming easier. These freeze extremely well before or after baking. Reheat from frozen at 375°F for 20–25 minutes. Serve on whole grain buns with avocado, sprouts, and tomato, or alongside roasted vegetables and tahini sauce for a complete retreat-style plate.
