📖 Why Kidney Beans?

Per cooked cup, kidney beans deliver approximately 15 grams of protein, 11 grams of fiber, and significant amounts of iron, folate, copper, manganese, and potassium. Ingredients

  • 3 cups Kidney Beans (soaked overnight and well-washed)
  • 1 tsp. Roasted Garlic
  • 1 tsp. Onion Powder
  • 2 Bay Leaves
  • 2 Tbsp. Green Onions
  • Pinch Cayenne Powder
  • Water

Directions

  1. Cook kidney beans in an Instant Pot for 35 minutes with 2 bay leaves; remove and discard the bay leaves after cooking.
  2. Cover the beans with water, ensuring the water reaches 1½ inches above the beans.
  3. Once the Instant Pot is done cooking the beans, add the seasonings.
  4. Simmer in a pot on the stove for about ½ hour.
  5. Add green onions before serving.

💡 Tips & Serving Ideas

Soaking overnight is especially important for kidney beans — raw kidney beans contain phytohaemagglutinin (a natural lectin) that is neutralized by thorough soaking and proper cooking. Always ensure they are fully cooked. Adding green onions at the very end preserves their fresh flavor and maximizes their nutritional contribution.
