Blending the chickpeas, dates, and water together is the key technique. The blending process fully liquefies them into a smooth, binding liquid that acts as the structural foundation of the batter — replacing eggs, oil, and refined flour simultaneously. The result is a muffin that holds together beautifully, rises properly, and bakes to a firm, golden crumb without any conventional baking ingredients.

Ingredients

  • 1½ cups Chickpeas, soaked
  • 1½ cups Dates
  • 3 cups Water
  • ½ tsp. Salt
  • 1½ cups Oats
  • 1½ cups Cornmeal
  • ¼ cup Coconut
  • ½ cup Raisins (optional)

Directions

  1. Blend chickpeas, dates, and water.
  2. Pour into a bowl and mix with the remaining ingredients.
  3. Pour into oiled muffin trays and bake at 350°F for one hour, or until golden.

💡 Tips & Serving Ideas

Soak chickpeas overnight — they need to be fully softened for a smooth batter. Blend until completely smooth with no visible chickpea pieces. Fill muffin cups about ¾ full. One full hour at 350°F is required for these dense, protein-rich muffins — insert a toothpick at the 50-minute mark. Allow to cool fully before removing from the tin. These freeze beautifully and reheat well.
