  • Oil — Adds tenderness to the crumb and extends shelf life.

The fermentation process in sourdough is nutritionally transformative. Phytic acid — the anti-nutrient in grains that binds minerals like zinc, iron, and magnesium — is significantly reduced during long fermentation, making sourdough's minerals substantially more bioavailable. Starter Recipe (make 24–48 hours in advance)

  • 1 Tbsp. Yeast
  • 1 Tbsp. Sugar
  • 1 cup Warm Water

Mix together and allow to ferment at room temperature until bubbly and active.

Bread Ingredients

  • 2 cups Warm Water
  • 1 tsp. Salt
  • 2 tsp. Oil
  • 1 cup Starter
  • 5 cups Flour

Directions

  1. Place water, salt, oil, and starter in the bread maker tin.
  2. Pour flour on top.
  3. Set the bread maker on a 5-hour cycle or a 12-hour cycle overnight.
  4. When completed, bake at 350°F for another half hour in the oven.

The 12-hour overnight cycle is recommended when possible — longer fermentation means more complete phytic acid breakdown, deeper flavor, and a more open crumb. Adding liquids first, then flour on top, is essential for proper bread maker function. The final 30 minutes at 350°F creates the golden crackling crust that defines great sourdough.
