š Why Black Beans?
A single cup of cooked black beans delivers approximately 15 grams of protein and 15 grams of dietary fiber ā feeding your gut microbiome, supporting healthy cholesterol, and providing slow, sustained energy that keeps blood sugar stable all day. Their deep black color comes from anthocyanins, powerful antioxidants linked to reduced inflammation, improved cardiovascular health, and cognitive protection. They're also rich in folate, magnesium, iron, and potassium.
š The Recipe
Ingredients
- 2 cups Black Beans (soaked overnight and rinsed well)
- ½ tsp. Roasted Garlic
- ½ tsp. Onion Powder
- ½ cup Fresh Cilantro
- 1 Peeled Tomato
- Pinch Cayenne Powder
- Pinch Smoked Paprika
- Salt to taste
- Water
Directions
- Cook beans for 55 minutes in an Instant Pot, covered by water (water should reach 1½ in. above the beans).
- Once the Instant Pot is done cooking, add the seasonings and simmer in a pot on the stove for about 1 hour.
- To thicken the sauce, smash some of the beans.
š” Tips & Serving Ideas
Soaking overnight breaks down phytic acid and oligosaccharides for better digestibility. Always add seasonings after pressure cooking to preserve their medicinal aromatic compounds. Smashing a portion of the beans creates a naturally creamy consistency ā no added fat or starch needed. Serve over brown rice, stuffed into corn tortillas, or alongside roasted vegetables. Refrigerate up to 5 days or freeze for up to 3 months.
